Gingery Carrots and Kale
This is such a bright and cheerful veggie side dish! Even the kids who say they hate kale will........probable never ever try it, because kids are jerks. But, if they DID try it... they would LOVE it.
Ingredients
1 Bunch of Kale, stems removed and roughly chopped
5 Carrots, sliced
3 Tbs butter
2 cloves of garlic, minced
1 Tbs grated fresh ginger
1 tsp lemon zest
salt and pepper to taste
1\4 tsp sugar
Directions
1) Melt Butter in a large skillet over medium heat. Add ginger and garlic to the melted butter, stir, and cook until the garlic becomes fragrant.
2) Add carrots to the butter mixture, stirring occasionally... Cook about 4 minutes or until carrots are tender.
3) Add the chopped Kale to the skillet. Stir, covering the kale in buttery goodness. Sprinkle with sugar and lemon zest. Cook until the kale begins to wilt.
4) Season with salt and pepper
