Apple Pie Bars
We all have those treats that people beg us to make.....these are mine. When I bring them to my Sunday family dinners, my brothers eat them in slivers until they are gone.... it takes them about 6 1/2 minutes. I do have 8 brothers...but still, they inhale these bars. They are also a top-seller at the neighborhood bake sale. I found this recipe in a land o lakes cookbook from the grocery store, I've tweaked it a bit over the years.... but essentially its the same. www.landolakes.com
ingredients:
-Pastry-
3 3/4 cup flour
1 1/2 tsp salt
1 1/2 cup cold unsalted butter
1 egg, separated, yolk beaten with enough milk to equal 1 cup. Reserve egg white.
-Filling-
1 cup crushed corn flakes
8 medium tart apples (like granny smith) peeled, thinly sliced.
1 cup sugar
3 tsp cinnamon
3/4 tsp nutmeg
1 reserved egg white
2 Tbs sugar
-Glaze-
1 cup powdered sugar
1/2 tsp vanilla
1-2 Tbs milk
Direction:
Preheat oven to 350
1) Combine flour and salt in medium bowl; cut in butter until mixture resembles coarse crumbs. Stir in egg yolk mixture with fork until dough forms a ball. Divide in half. (I like to make one half a little bigger then the other, so it will cover up the sides of the jelly roll pan)
2) Roll out the larger half of the dough on a lightly floured surface until its big enough to fit into a 15x10 inch jelly roll pan. place in pan. Sprinkle with crushed corn flakes; top with apples.
3) Combine 1 cup sugar and 2 tsp cinnamon and nutmeg in a small bowl. Sprinkle over apples. Roll remaining half of dough so its big enough to cover the top of the apples. Gently lay over the top of the apples.
4) Beat egg white with fork until foamy' brush over top crust. Stir together 2 tablespoons sugar and remaining cinnamon in a small bowl: sprinkle over crust. Cut some slits on the top (i like to use small cookie cutters for a fun look) bake for 45 to 60 minutes or until lightly browned.
5) Stir together powdered sugar, vanilla and enough milk to desired glazing consistency in small bowl. Drizzle over warm bars. Enjoy!
