Greek Grilled Chicken Sandwiches w' Kalamata Olive Aioli
Sometimes a sandwich is the best thing in the world. This sandwich falls into that category...yum, yum, yum. From the marinated grilled chicken to the amazing aioli this is a dinner or lunch home run!! Perfect for a summer party.....different, but so easy.
Ingredients:
-grilled greek chicken-
2 chicken breasts, butterflied so you have 4 fillets
the juice from 1 1/2 lemons
1/3 cup Mediterranean olive oil ( or normal)
1 tsp lemon zest
1 1/2 mediterranean seasoning
1 tsp dried oregano
2 cloves garlic (minced)
1 tsp honey
pepper to taste
-olive aioli-
1 cup mayonnaise
2 1/2 Tbs finely chopped kalamata olives
1 tsp lemon juice
1 1/2 tsp olive oil
1/4 tsp oregano
salt and pepper to taste
-toppings-
cucumbers (sliced)
red onions
feta
tomato
micro arugula ( or greens of your choosing)
crispy bacon strips
4 chiabatta rolls or regular hamburger buns
Directions:
1) Mix all the ingredients for the marinade with a wire whisk. Pour over chicken in an airtight container and place in the fridge for at least 4 hrs or all day if desired.
2) While the chicken is marinating make the aioli. Mix all the aioli ingredients together. Cover and store in refrigerator for later.
3) When you are ready to cook your chicken. Heat up your grill...when hot, add chicken...grill until marks appear then flip over (about 5 -8 min depending on how hot your grill is and how thick your chicken is). Cook on the other side the same amount of time. Chicken should be 165 at its thickest spot or just cut it open and make sure its no longer pink.
All thats left to do is assemble; Roll, chicken, bacon, tomato slice, cucumber slices, onion slices, micro arugula, feta and olive aioli.... Enjoy!
