Hoisin Glazed Halibut with a Chinese 5 Spiced Whipped Sweet Potatoes and English Peas.
Normally I like to post my recipes as separate parts, sides and main dishes. Each element would be delicious on their own, but together they equal a mouth party. The yummy richness of the hoisin glazed Halibut goes so well with the buttery goodness of the sweet potatoes with just a hint of spice..and then the fresh pop of the english peas is such a nice surprise. SO GOOD!
Ingredients:
4-5 6oz Halibut Filets
4 Tbs unsalted butter
Pepper
- Glaze-
1/2 cup hoisin sauce
1/4 cup soy sauce
1 tsp orange zest
4 scallions, thinly sliced
-Sweet Potatoes-
3 sweet potatoes, pealed and cut into equal chunks
5 Tbs butter, melted
1/4 cup cream
1/2 tsp Chinese 5 Spice
1 tsp orange zest
Salt and pepper
-Peas-
1 1/2 cup shelled fresh english peas
3 Tbs salted butter
Directions:
Preheat oven to 375
1) Put sweet potatoes into a pot, cover with water and pour in about a Tbs of salt. Bring to a boil.
2) In a small bowl mix all the ingredients for the Hoisin glaze together. Set aside.
3) When the potatoes are boiling and getting close to soft, melt 4 Tbs of butter in a large oven proof skillet, sprinkle the halibut with pepper and place top side down in the pan, searing the top of the fish. When the top of the Halibut is nice and golden turn over...pour the glaze over the tops of the Filets. Place the pan with the fish in the oven to finish cooking, about 8 minutes or about 135 degrees when tested with a meat thermometer.
4) At this point the sweet potatoes should be soft. Drain the potatoes and put them back into the pot (if you have an immersion blender) or into the bowl of a food processor. Blend the potatoes with the cream, melted butter, 5 spice, and orange zest. Salt and pepper to taste. When the potatoes are all creamy, warm them back up for a min on the stove top. Check on your fish, they should be done... remove from the oven.
5) Melt the 3 Tbs of salted butter in a small pan. Stir in the peas, cook for only 1-2 min. You want them to stay nice and crisp.
6) Serve, Whipped sweet potatoes on the bottom...Halibut next, making sure to cover the fish with little extra sauce from the pan. Top it all off with the fresh peas. YUMMY!
