Blackberry Butter

I visit San Francisco quite often, and when I do I eat lunch at Neiman Marcus (not as hoity toity as it sounds) they have these Popovers with strawberry butter that I LOVE! I was craving those the day I made this butter. I didn’t have strawberries, but I had gorgeous blackberries! I visited San Fransisco the next week….I liked my blackberry butter better.

Ingredients:

3/4 cup unsalted butter, room temperature

3 Tbs sugar

1/4 tsp almond extract

1/2 cup black berries, halved

1/4 tsp salt

Directions:

Using an electric mixer, beat the butter until fluffy and smooth. Add sugar, almond extract and salt, beat for another minute or two. I used my stand mixer, so I was able to add the black berries on low speed… but if you are using a hand mixer I would stir them in with a spoon. Place butter on a sheet of plastic wrap and shape into a log and refrigerate for at least 30 minutes. Enjoy!
