white chocolate, cherry, oatmeal cookies
When I make this cookie for parties or neighbors the recipe is always requested! I’m finally doing it…only took 3 yrs to get it all jotted down. Better late then never.
Ingredients:
1/2 cup butter, room temp
1/2 cup granulated sugar
1/2 cup packed brown sugar
1 egg
1 1/2 tsp vanilla
1 1/4 cup flour
1/4 tsp salt
1/2 tsp baking powder
1/4 tsp baking soda
1 cup quick cooking oats
1 cup coconut
1 cup dried cherries (or cranberries, raisins)
1 cup white chocolate chips
Directions:
preheat oven 375
1) In a bowl whisk together flour, baking powder, baking soda, salt …set aside.
2) In a large mixing bowl beat butter with an electric mixer on medium speed until fluffy. Add sugars, beat until combined, beat in egg and vanilla… scraping sides when needed.
3) On low speed slowly add the flour mixture, beat until combined. Still on low speed add oats, coconut, cherries and white chocolate.
4) Drop dough by rounded tablespoons 2 inches apart onto a parchment lined cookie sheet, pressing lightly down onto the tops the cookies. Bake for 8 - 10 minutes or until the edges are golden. Cool on a wire rack. ENJOY!
