Grandma Dorothy's Spare Ribs
I have 8 brothers and 2 sisters....have I told you that before? My childhood was loud, fun and full of great food. My mother, who will get credit for a lot of the recipes on this sight, made family dinners a priority. Even now as adults with all of our own kids, we gather at her house most Sundays and eat together. Thats 50 people and counting. Any-who... when i was young my dad traveled a lot for work; to help ease my mothers load my grandma started bringing Sunday dinner. I had an AMAZING grandma, I wouldn't call her the most amazing cook but i did LOVE her spare ribs. I'm sharing that recipe..altered a bit to match my taste.
Ingredients:
3 lbs boneless pork spare ribs
1/2 cup low sodium soy sauce
1 1/2 cup ketchup
1 1/2 cup wather
1/2 cup brown sugar
1 1/2 tsp liquid smoke
Directions:
1) Salt and pepper ribs and put them in a crock pot
2) Mix the rest of the ingredients in a bowl and pour over the ribs. Turn the crock pot on high and cook for 6 hours.
3) About 20 min before you are ready to serve; remove about half of the liquid from the pot with the pork. Pour the liquid into a small sauce pan. bring to a simmer and reduce a bit until the sauce has become a bit thicker. be careful not to reduce the sauce too much or it will become to flavorful; if this happens just add a little water.
4) Turn the oven to broil. Place the ribs on a baking sheet baste with the reduced sauce. Place in the oven, watching closely to prevent burning and remove when the meat looks nicely caramelized.
Enjoy with some delicious mashed potatoes.
