Banana German Chocolate Cake
Who else can't throw out an over ripe banana? Who else is sick of Banana Bread...thats a dumb question, can you ever get sick of banana bread? Anywho, I had some bananas that were teetering on the edge of extinction and some open bags of coconut and pecans... VIOLA! Banana german chocolate cake! This recipe was adapted from the cookbook "Your Cup of Cake" www.yourcupofcake.com
Cake Ingredients
1 box devil's food cake mix
2 tsp cinnamon
1 cup mashed bananas
1 tsp baking soda
3 eggs
1\2 Cup + 2 Tbs oil
1 cup buttermilk
2 tsp vanilla extract
*2 bananas (optional)
German Chocolate Frosting
1 cup exaporated milk
1 cup granulated sugar
3 egg yolks, lightly beaten
1\2 cup butter
1 1/2 tsp vanilla extract
2 cups chopped peacans
2 cups flaked coconut
Cake Directions:
1) Preheat oven to 350 and grease a bunt cake pan.
2) In a small bowl, shift cake mix and cinnamon and set aside
3) In a separate bowl, stir together mashed bananas and baking soda and set aside.
4) In a large bowl or standing mixer with a paddle attachment... combine eggs, oil, buttermilk, and vanilla.
5) Add cake mix and mashed bananas... mix until smooth.
6) This step is purely optional, but if you have extra bananas and you want your cake to look a bit fancy. Take 2 bananas but them in half lengthwise and then in half diagonally and press them, seed sides out evenly around the edges of the bunt cake pan.
7) Pour batter into the prepared pan and bake for 40 min or until tester comes out clean.
Frosting Directions:
1) In a medium saucepan over medium heat, constantly stir evaporated milk, sugar, egg yolks, and butter until thick, about 10-15 minutes.
2) Sir in vanilla extract, pecans and coconut. Let cool.
3) Top cake Generously (oh baby) with frosting.
