banana oat bars w' chocolate ganache
Pretty soon I’ll be able to make a whole site dedicated to banana recipes. I just love banana deserts and I’d rather never eat a plain one. This one is almost healthy with the oats and everything, so eat them for breakfast, snack time or even dinner.
Ingredients:
2 small bananas, about 1 1/2 cups (smashed)
1/2 cup butter, room temp
1/2 cup sugar
1/2 cup brown sugar
1 egg
1 tsp vanilla
1 cup flour
1 1/4 cup quick oats
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
-Ganache-
8 ounces semisweet chocolate chips
1/2 cup heavy cream
Directions:
Preheat oven 350. Grease a 9x9 cake pan.
1) Beat butter and sugars until fluffy. Add the egg beat until combined. Beat in the bananas and vanilla.
2) On a low speed, mix in the flour, oats, baking soda, baking powder and salt. Pour into prepared pan. bake 15-20 minutes or until a toothpick comes out clean.
3) While the cake is baking prepare the ganache. Cook the chocolate chips and heavy cream in the top of a double boiler over simmering water until smooth and warm, stirring occasionally.
4) Top warm (not piping hot) bars with chocolate. ENJOY!
