Sticky gochujang chicken
Spicy, sweet and savory ….You know, all the things that make your tastebuds dance. I put this chicken on a bed of whipped sunchoke and it was heaven, but it would also be tasty with rice or on its own. Simple to make and a party to eat, a dinner no brainer.
Ingredients:
6 bone in skin on chicken thighs
1-2 Tbs oil
-sauce-
1 Tbs honey
1/3 c soy sauce
1/4 c canola oil (or any other mild tasting oil)
3 scallions, thinly sliced
1 inch ginger piece, grated
5 cloves garlic, minced
5 tsp gochujang
1/4 c cilantro, chopped
Directions:
Preheat oven 400*
1) In a small bowl whisk together all the sauce ingredients, set aside.
2) Sprinkle chicken pieces with salt and pepper. Warm oil In a large (oven safe) skillet over medium - high heat brown your chicken in 2 batches. Add all the chicken back to the pan and cover with the prepared sauce.
3) Place chicken in the oven, cook for 15 minutes or until a meat thermometer reads 165. Half way through the cooking process drizzle chicken with the sauce in the pan. Serve with rice or like I did with whipped sunchokes. ENJOY!
