Banana cookies with cream cheese frosting
My kids love this cookie! I used to make them for my neighbors at Christmas but my family demands them all year round. Also! We all need another way to use those over ripe bananas!
Ingredients:
1 cup butter, room temp
1 cup sugar
2 eggs
1 heaping cup mashed bananas ( about 2 bananas)
1/2 cup buttermilk
1 tsp vanilla
3 cups flour
1 1/2 tsp baking powder
1/2 tsp salt
1 cup chopped pecans
-frosting-
4 ounces cream cheese, room temp
1/4 cup butter, room temp
1 Tbs milk
1 Tbs vanilla
2 1/2- 3 cups powdered sugar
Directions:
Preheat oven 350*
1) In a bowl, with an electric mixer beat together butter and sugar until fluffy. Add eggs beating until just combined. Mix in bananas, vanilla and buttermilk. On low speed, mix in flour, baking powder, and salt until combined. Stir in pecans. Drop by Tbs on a greased or parchment lined baking sheet…bake for 12 min or until cooked through (don’t over bake or they will be dry). Cool completely.
2) To prepare the frosting. Beat cream cheese and butter until fluffy. Beat in 1/2 of the powdered sugar, add the milk and vanilla… beat in remaining powdered sugar. Frost cooled cookies. ENJOY!
