Cheesy bacon potato stacks
Potatoes, cheese and bacon. Nuff said.
Ingredients:
2 Tbs butter
3 cloves garlic, minced
1/3 cup half and half or cream
1/2 tsp salt
1/2 tsp pepper
1/3 cup sharp cheddar cheese, shredded ( plus 1 cup for topping)
2 pounds small golden potatoes
1 Tbs chives, finely chopped
8 ounces bacon, cooked and cut into 1/4th
Directions:
Preheat oven 375* Grease 12 muffin cups.
1) Peel the potatoes and very thinly slice them with a mandoline or sharp chef’s knife. Place the slices in a large bowl.
2) In a saucepan, melt the butter over medium heat. Add the garlic and cook for about a minute or until the garlic becomes fragrant. Stir in half and half, salt, pepper and cheese and chives.. cook until cheese is melted. Pour cheese mixture over potato slices, toss until potatoes are coated.
3) Stack the potato slices into muffin cup, when filled half way, add 2 pieces of bacon…then stack more potatoes until cup is full. Repeat until you run out of potatoes. Top with remaining cheese. Bake until cheese is golden brown and the potatoes are fork-tender, 10 or 15 minutes. Let stand for a few minutes. sprinkle with crumbled bacon and chives. ENJOY!
