Mama Kathy's Potato and Onion Chowder
Classic comfort food. Creamy, rich and so, so simple. Ive been making this as long as I've been married and before that I ate it at my childhood table. It's a family favorite for sure. I loved making this chowder when I was a young mother, with three little kids running around; it was easy, and cheap and all my kids LOVED it. They still ask for it regularly and its my go to meal to bring to sick neighbors or new mommies. I hope you love it as much as we all do.
Ingredients:
2 cup onions, diced
1 cup celery, chopped
4 Tbs. butter
4 cups chicken broth (or veggie broth to make in vegetarian)
2 tsp. kosher salt
Pepper to taste
4 cups raw potatoes, cubed
3 cups whole milk
2 cups cream
2 heaping Tbs. corn starch
1 tsp. chopped parsley
Directions:
1) In a deep pot, Sauté the onions and celery in the butter until transparent, but not browned.
2) Add the chicken broth, salt pepper and potatoes. Cover and bring to a boil. Reduce the heat and boil gently until the potatoes are tender, about 20-30 minutes. (they must be quite tender as they will not get much softer from this point on). Add the whole milk and bring back to a low boil.
3) in a separate bowl mix the cream and the corn starch, whisk until corn starch is dissolved.
4) When the soup is boiling add the cream mixture. Stir for a few minutes, as the soup thickens. Add the parsley and more salt if needed.
I serve this soup with some crispy chopped bacon and cheese and a little fresh chive.
