Mama Kathy's Crab Salad

I will not apologize for the imitation crab meat. I live in a desert and this salad is super yummy!! I make it in the heat of summer and serve it on a crusty roll, when turning on an oven feels like torture. I also make it at Christmas…not sure why, but it’s always a hit at parties.

Ingredients:

2 tsp Dijon mustard

2 tsp yellow mustard

1 tsp salt

1/2 tsp pepper

1/2 tsp dill weed

1/4 cup red wine vinegar

1/3 cup sugar

7 stalks celery, sliced

1/2 large red onion, finely diced

6 eggs, hard boiled and grated

2 cups mayonnaise

2 lbs of artificial crab meat, broken into bite size pieces (place in large bowl and refrigerate)

Directions:

1) In a medium sized bowl mix all ingredients other then the crab meat.

2) Add mayonnaise mixture to the refrigerated crab meat. Mix well.

3) Refrigerate until chilled. Serve as a salad or on a roll or croissant.
