Sloppy Joes and Onion Rings (2 recipes 1 post)

My mom got the recipe for  Sloppy Joe's from my aunt Georgette....don't you just love family recipes? Generations of siblings and cousins all coming to the table to enjoy the same dish. These tasty, messy sandwiches were a favorite in my house growing up and now they are a favorite with my own children. Serve them with SUPER DELICIOUS onion rings and it's a win-win situation. 

Sloppy Joe Ingredients:

2 Lbs. lean ground beef

1 cup katchup

3 tsp. Worcestershire sauce

1 tsp. salt

1/2 onion

4 Tbs. cider vinegar

1/4 cup water

1/2 tsp. garlic powder

 2 Tbs. lemon juice

2 Tbs. chili powder

1 tsp. sugar 

1/2 tsp. pepper

Sloppy Joe Direction:

1) Brown the ground beef with the onion... stirring frequently to break up the meat. Drain the beef when it is all browned, to remove the excess grease. 

2) Combine all the other ingredients in a bowl, sir together and then pour into the beef mixture. Cook on medium-low heat for at least 1/2 hour. If too much liquid evaporates just add a little water.

 

Onion Ring Ingredients:

1 large onion, cut into 1/4 inch slices

1 1/4 cup all purpose flour

1 tsp. baking powder

1 tsp. salt

1 egg

1 cup milk

1 cup Panko bread crumbs 

kosher salt

oil for frying 

Onion Ring Directions:

1) Fill a large pot with about 4 inches of oil. Heat the oil to 360 degrees F.

2) Separate the onion slices into rings, set aside, In a small bowl, stir together the flour, baking powder and salt.

3) Dip the onion slices into the flour mixture until they are all coated, set aside. 

4) Mix the egg and milk into the remaining flour mixture. Dip the floured rings into the batter, then place them on a wire rack until the bater stops dripping. 

5) Pour bread crumbs into a pie pan or small baking dish. Place coated rings one at a time into the crumbs, shaking the dish, making sure the ring is well coated with the crumbs. Repeat with remaining rings.

6) Deep fry the rings a few at a time for about 3 minutes or until golden brown. Remove  and place on wire rack or paper towels to drain. Season with kosher salt ( they only need a little).
