Strawberry Granola Cookies
It's Strawberry season!! Yippy! I've got a great way to use up all those delicious, beautiful berries. Cookies!! I rolled these yummy fruity cookies in granola before i baked them to give them some added crunch....such a good decision on my part :) I have one tip...don't be afraid to leave these cookies out on the counter top..once you trap all the moisture in with plastic wrap or tubberwear they become soft....still super tasty..just loose the crunch.
Ingredients:
4 cups flour
1 Tbs baking powder
1 Tbs baking soda
1 tsp salt
1 1/2 cup unsalted butter, room temperature
1 1/2 cups sugar
1 1/2 cups brown sugar
3 eggs
2 tsp vanilla
4 cups strawberries, chopped
3 cups rolled oats
2 cups sweetened flake coconut
1 cup pecans, chopped
16 ounces plain granola (no nuts, just vanilla or honey)
Directions:
preheat oven to 350
1) Whisk together flour, baking powder, baking soda, salt....set aside.
2) Mix butter and both sugars. Add eggs and vanilla beat until combined.
3) Add flour mixture to the butter mixture. Mix in coconut, oats and pecans. Stir in chopped strawberries.
4) Roll heaping spoonfuls of cookie dough into granola. The batter is soft and moist...but if you feel like its too soft, refrigerate it for a bit before rolling your balls. Place Granola covered balls on a parchment lined baking sheet and bake for about 12 min...rotating halfway through. Transfer to wire rack to cool.
I would say these cookies are better over baked then under baked. Enjoy!
